Four Winds Farm is now offering yoga classes on Monday evenings with instructor Hally Oliver. Enjoy the peaceful farm setting and start your week the best way possible with one of these choices:

5:00PM: Slow Flow yoga is a steadily paced, mindful modality that incorporates breathwork with focused powerful movements. This class will build strength, energize your body, increasing flexibility + range of motion through deep stretches. Each session includes foundational yoga poses, with special attention to balance, breath and alignment through longer holds. Come break a sweat! Slow Flow is appropriate for all levels of yoga experience and particularly accessible for beginners.

6:15PM: Gentle Restorative yoga works deeply into the muscles, joints and spine. Experience long holds of grounding postures, easing into calm stillness. The mode is rest and digest, attend and befriend. You’ll leave feeling relaxed, refreshed, and elongated after every class. This practice is accessible for all levels and especially recommended to balance more intense workouts, a busy lifestyle or stress.

Hally Oliver has been teaching yoga in Madison for 15 years. She aims to help you build a sustainable movement practice that includes pleasure, inspiration and creativity.

CorePower Yoga Chicago is where she received training and certification through Yoga Alliance. That was enough for big city life. She's more at home on the farm with her horse or out in the woods with her dogs and family.

Before yoga, she completed the 750-hour program at Lakeside School of Massage Therapy, graduated from UW- La Crosse, and worked briefly in the enlisted ranks of the US Army.

Her wish is to guide you through sequences that create strength, relieve pain and remind you of your good heart. She believes yoga leads us to community through harmony.

We are delighted to announce that James Juedes has joined the Four Winds Farm team as our new sommelier! James is a star of the local wine and hospitality scene (Amara, Casetta, L’Etoile) with a deep knowledge of the beverage world and a passion for sharing it with guests. He will be a regular fixture at upcoming wine events: tasting, pop-ups, seminars, dinners, and much more. This dinner in May is built around his ideas of how to construct a menu and how he thinks of beverage pairings. We look forward to seeing you all to help welcome James to Four Winds Farm.

A note from James:

Just like food, there is a natural progression to the enjoyment of beverages throughout the course of a meal. Join us Thursday, May 21 and be a part of the process as we break down food and beverage pairings. You’ll get to enjoy five dishes designed to accompany five different wine and spirit pairings and talk through the methodology as we go. While there are tried and true approaches, this is less about what’s right or wrong and more about maximizing enjoyment. We hope to see you there for another fun evening on the farm!

Menu and pairings:

Toulouse Goose
Rillete, kernza sourdough, rhubarb compote

Pago Pago daiquiri

Walleye Roulade;
puffed wild rice, asparagus veloute

Riesling, 2024, Birgit Echinger, "Zöbing”
Kamptal, Austria

Ramp Ravioli; goat
cheese, guanciale, morel mushroom cream

Trousseau/Gamay, 2022, Jolie-Laide, California

Lamb Involtini;
pea puree, braised radish, farro, lamb jus

Nerello Mascalese, 2021, Eduardo Torres Acosta,
“Arenaria” Terre Siciliane, Sicily, Italy

Vanilla Bread Pudding;
chantilly cream, caramel sauce, door county cherry

Banana Brandy Alexander

Chef in Residence Jon Rosnow will return to cook for our guests. This experience has a fixed menu. Please email info@fourwindsfarmfitchburg.com to inquire about dietary restrictions.

What is Vingård?

Vingård is Four Winds Farm’s monthly wine club. The name Vingård, inspired by Wisconsin’s Scandinavian heritage, translates to “vineyard,” but also carries the literal meaning of “wine farm”—a concept that captures the idea of wine and agriculture existing in dialogue with each other. After the success of the wine club, we are now expanding to offer our members and guests additional wine experiences at Four Winds Farm.

Four Winds Farm is excited to welcome Chef Itaru Nagano to
the kitchen on June 4 for a rare pop-up dinner! Guests will enjoy five creative
courses with beverage pairings in the comfort of the farm’s kitchen. This
dinner is limited to 24 seats. Join us for a celebration of the bounty of late
spring with this special event.

Itaru Nagano – Chef + Owner of Fairchild Restaurant

Chef Itaru Nagano started cooking at a Japanese restaurant
in Madison, Wisconsin to relearn the language after moving from Japan to the US
at the age of nine. After getting hooked into cooking, Nagano moved around the
country making sushi and Japanese food. Nagano lived and cooked in Los Angeles,
New York and Phoenix, then back to Madison before deciding that he wanted to go
to culinary school. Nagano went to the Culinary Institute of America in Hyde
Park, New York and graduated with honors. After culinary school, Nagano worked
for James Beard Award winning chef Jose Andres in Washington, DC and continued
on to work for James Beard Award winning chef Tom Colicchio as a Sous chef at
the flagship restaurant Craft.

Nagano returned to Madison and worked at L’Etoile for over
six years for James Beard Award winning chef Tory Miller, five years of which
Nagano was the Chef de Cuisine. Nagano enjoys making simple food that is simple
and not over complicated, but with good ingredients. The focus for Nagano is
making the ingredients shine. At Fairchild, Nagano aims to bring fine dining
back into casual, having really good food done the right way.

This meal is priced at $180 per guest, which includes
beverage pairings and gratuity. Please inquire at
info@fourwindsfarmfitchburg.com to inquire about accommodations for allergies
